A light touch in the winery allows the true expression of the grapes to shine, but sometimes they need a little nudge. That is where we come in!
Foot Juice!
Stomping allows gentle flavor extraction.
Foot stomping allows us to extract a little bit more color from the grapes prior to pressing. It's cold! But the reduced tannic structure of the wine allows us to maintain a beautiful levity in the final product.
